Patrons of U.S. Cuisine Festival (November 2003) in Sao Paulo, Brazil were delighted by cooking demonstrations by Chef Roy Lyons and samples of his Cajun cuisine. The festival was sponsored by USDA's Foreign Agricultural Service Sao Paulo office, and the southern U.S. food promotion was sponsored by SUSTA. Chef Roy created unique southern U.S. dishes featuring U.S. products. Chef Roy Lyons is a certified executive chef that achieved numerous awards for his Cajun cuisine. He owns Chef Roy's Frog City Café in Rayne, Louisiana.
The event menu consisted of coconut beer shrimp Acadia, seafood stuffed shrimp, seafood gumbo, shrimp gumbo, jambalaya and croquette bayou. This cuisine festival was exciting to the palette and educational for the attending Sao Paulo chefs that learned to prepare, store, season, and cook Louisiana cuisine. The promotion organizers educated local chefs on locating items made in Sao Paulo to use in preparing Cajun dishes.
The highlight of the festival was the Sunday brunch on November 23. Approximately 400 people were served the unique blends of spicy food from U.S. The American Ambassador, a Sao Paulo food writer and a host of other dignitaries in Sao Paulo, Brazil were on hand. SUSTA received praise about the event and Chef Roy will return to Brazil for other promotions to highlight U.S. food products.
